Healing Chicken Tomato Stew
I posted this on my book of faces, but i thought i’d put it here too.
Due to popular demand, and the approaching cold & flu season, here’s my recipe for my healing soup/stew.
It can be made vegan by omitting the chicken, but I do think the zinc-heavy dark meat and minerals from the bone marrow should be replaced with something. Cashews, maybe?
If you’re vegetarian, substitute chopped up hard-boiled eggs. It will make it slightly creamy.
Use whatever veggies you like, that you have on hand.
The hot sauce will clear you out. Plus, with all the onion and garlic, no one will want to be near you, thus helping prevent the spread of the virus.
Healing Chicken Tomato Stew.
2 chicken thighs(bone-in)
1 red onion, chopped
4 cloves garlic, diced finely
2 tomatoes, chopped
1 cup V8 juice, low sodium
2 cups Water
1 celery stick
1 carrot
1 cup each broccoli and cauliflower
1 TBSP balsamic vinegar(or you can use your favorite soy sauce)
1 TBSP each: cumin, dill, oregano, basil,
1-2 TBSP Rosemary
Parsley, Fresh, chopped,
Chipotle Hot Sauce, salt, & pepper to taste.
Liberal amounts of Olive Oil
1. Fry chicken in oil til it starts to brown.
2. Add onion and garlic til the onion starts to go translucent.
3. Stir in tomatoes.
4. Add the cumin, rosemary, basil, oregano, balsamic vinegar, and chipotle hot sauce. Cook for 5 minutes.
5. Stir in the V8 and water
6. Cover and boil. Reduce to simmer for 10 minutes, stirring occasionally.
7. Add all the veggies, except the celery.
8. Simmer for another 10 minutes.
9. Remove the chicken, chop up the meat, add it to the soup, and discard the bones.
10. Stir in celery and parsley. Turn off stove, and let cool for a few minutes.
11. Add salt and pepper to taste.
Serve over your favorite pasta or noodles. I prefer rotini with this chunky rustic soup/stew.

This helped many-a-colds and flu. I tend to add lots of parsley at the end, and ALWAYS lots of chipotle hot sauce for the smokiness(though substitute your favorite).
